Meal Planning Kit, Week 4, Day 3

The last three meals, in the week 4 meal planning kit, where moved to the end; because I didn't realized there was some prep needed ahead of time.  It is important to read all the recipes and plan your week accordingly!

So, now we start with one that needed one of my favorite breads baked ahead of time, the Savory Tuscan Bread Quick Mix

Focaccia Sandwich & Roasted Garlic Basil Salad



It's that easy, just Savory Tuscan Bread Quick Mix & beer


Drizzle with EVOO


Smells & looks so yummy, can't we just eat it now!


Slice into a giant sandwich



Hot Raspberry Chipotle Mayo

Both sides get our special sauce


Lettuce

Roast beef



Cheddar cheese

More about Little Man - He is our fruits & veggies guy.  The exception to this rule is salad, he doesn't like salad!  So, much to our surprise, he is sneaking this salad out of the serving dish.  Like everything else, he just had to try a bite or tow and he did . . . then we caught him sticking his fork into the serving bowl to grab more.   I think I will be making this salad dressing a lot!

Meal Planning Kit, Week 4, Day 2

After a weekend of three events, with lots of fun & friends; we needed a quick & simple Sunday night dinner.   We certainly accomplished that tonight with:

Meatloaf with Hot Raspberry Chipotle Sauce



Beat up that egg!


Add garlic, onion & red pepper to egg


Time to add the good stuff
Hot Raspberry Chipotle Sauce



Bread crumbs


Mix it all together


The gooey luscious mess


Hubby agreed to help with the dirty work today

Side track:  Yep, I do have one of those extra special hubbies, that is always helpful in the kitchen - he takes on the dirty work, preps food, cleans up as we go and is the best dishwasher ever!

All ready for 30 minutes in the oven


After 30 minutes, top with more Hot Raspberry Chipotle Sauce
and back in the oven for 20+ minutes more


Cook to at least 155 degrees

Bonus:

The side suggestion was baked sweet potatoes, so we had purchased sweet potatoes on our weekly shopping trip.   We all decided on something different and wanted baked sweet potato chips.

The boys decided they wanted to add Parmesan cheese, too


baked them for a while, flipped them over and did the same on the other side

These are an all time favorite of mine and extra special, made with our Biltmore seasoning salts. Though the Blazin' Hot Seasoning Salt is too spicy for me, Hubby ate that entire pan by himself!

Meal Planning Kit, Week 4, Day 1

Our Week 4 Meal Planning Kit arrived and the whole family was home for dinner tonight, it was the perfect night to start.  

With the teenager home from college for the weekend, last night hubby and I got to shop together without little man - most parents understand what a treat that can be.   This is what we bought (though we did already have some items in the pantry & fridge):


Tonight we all sat out to decide which meal to start with - We decided on salmon, since we all love it and we are one week from little man's Make-A-Wish trip, to find Shamu in his natural habitat, in Alaska.  We are planning to eat a lot of salmon on that trip, so it is like a teaser!  And, we all love salmon!  Also, we all love the Biltmore Inspirations Mountain Berry Wasabi Mustard!  The teenager even steals it and takes it to college, he says it makes the dorm food edible. 

Sidetrack:  When I first started my Biltmore Inspirations Business, I knew there would be one product that was really hot, the one everyone had to have!  I assumed it would be a big, beautiful, expensive decorator piece.   Turns out my number one product is the Mountain Berry Wasabi Mustard.  It starts in our home with hubby, who will put it on just about anything - some of his favorites are sausage, fish, steak, shrimp, eggs, pretzels, asparagus and broccoli. 

Salmon with Mountain Berry Wasabi Sauce



Salt & pepper the salmon and bake it

While it's baking:


Melt 2 table spoons of butter


Add 2 table spoons of flour


Bubbling up and creamy


Add 2/3 cup heavy cream & 1/3 dry white wine


That wonderful "fondue smell" again


Time to add 3 table spoons of the good stuff


We served it with the suggested spinach salad and
some wonderful Parmesan roasted asparagus, that I found on Pinterest

The sauce was so yummy I dipped my asparagus in it too.   We will make this sauce for our next fondue party, as a topping for steamed veggies and I am sure we will come up with many more uses.  We would love to hear your ideas for it!

Hubby's quote "It is great to be back to trying some new meals again, this is fabulous!"

What did the teenager have to say? "Very delicious, I like the sauce on the salmon" - I guess he thought I was asking about the meal overall, not specifically the sauce.

Little man even ate salmon with something on it besides teriyaki. 
He is a purist (salt & pepper), except for his teryaki!
